Kent Altena's Jamaican Jerk Chicken is Awesomeful of Awesomeness

Sometimes Jerki-ness is good - when it's Caribbean Jerk, mon!

Kent's Jamaican Jerk Chicken and Pork makes
ya feel like dancin' to reggae mon!
My buddy Kent Altena and his missus attended the Low Carb Cruise to Jamaica not long ago. They returned, inspired by visions of Jamaican Jerk and reggae in the night. Kent came back a craivin’ kind of guy. Inspired by the abundance of excellent low carb cooks on board, great food and inspiration and visions of Caribbean dancing in his head, it didn’t take him long to dream up a cure for the modern Jerk jones.

Please take the time to visit Kent’s site, Atkin’s Diet Geek and read his terrific recipe – then don’t forget to mark a reminder on your calendar to make it! He has a very good video tutorial on YouTube where he demos the recipe. Don’t forget to take notes on his grilling technique! Grilling bone in chicken pieces is not an easy feat, my friend, but Kent de-mystifies the process! Way to go, Kent!

I have to admit, I don’t have much experience with Caribbean cuisine. Prior to test driving this baby, I’m ashamed to admit my only run in with jerks was

Texas Chicken Pizzaiolo - It's Texan, Low Carb and Paleo! Yeehaw!

Oh Texas Chicken Pizzaiolo How I love Thee. You Paragon of Leftovers Complete Me!

As I mentioned in the Armadillo Egg post, this is a love story devoted to leftovers.

Texas Chicken Pizzaiolo will never give your secret away.
No one will ever call you the Leftover Queen!
Texas Chicken Pizzaiolo translates to the Pizza Maker’s Chicken – Texas Style! Why do I call it Texas Style? Well because there are big honking jalapenos and goat cheese involved and jalapenos and goat “anything” is almost synonymous with Texas. Look up Texas on Wikipedia. You’ll see a goat and a big honking jalapeno. Would I lie to you?

Texas Chicken Pizzaiolo really translates into a marriage between three leftovers and cheese – the lovely cheese - that scrumptious cement that binds. Armadillo Eggs, Roasted Tomatoes (recipe follows), and Pizza Sauce (recipe follows) layer to make a breathtaking entrĂ©e that will never resemble leftovers. In fact, you will love it so much, it might take the place of Chicken Parmigiana!

Texas Armadillo Eggs - Have Grill Will Travel

Sometimes Havin' A Plan, Especially a Plan for Leftovers Makes Life Easy.

Armadillo Eggs - Low Carb, Gluten Free and so good you
wouldn't give a hungry dog a bone! No sharesies!
This is a leftover love story. What I really mean is this is a love story about leftovers. Done correctly, "leftover" is not a four letter expletive! I actually love leftovers when they can be disguised and morphed into a completely different dish!

No. The chicken breasts in this story aren’t leftover! But the Armadillo Eggs themselves are meant to be leftover. So make lots, okay?

Armadillo Eggs taste divine in their own right, but used in the next recipe comin’ your way, well they become transcendent. You might just cry from taste bud overload.

But why are they called Armadillo Eggs, you might ask? Good question from the little lady in the first row. They’re big. Very big. And they’re egg shaped. And I don’t have a lot of creativity. Meh. And the name amuses the ‘boys.’ So they’re Armadillo Eggs.

You Choose, Please? The Next Post is Your Choice!

Sometimes bein' the boss of cheese and ketchup is rough.

First Culprit - Armadillo Eggs are the first part of a Leftover
Love Story. Eat Armadillo Eggs one night and the
next night they morph into Texas Chicken Pizzaiolo.
Often times I feel like I'm a fake. Sure the 'boys' think I'm large and in charge, but truthfully, anything bigger than a breadbox would qualify as 'large and in charge' under the 'boys' existing definitition.

The neighborhood tomcat could be identified as LAIC under their definition. The dang, huge Skippy the Squirrel could hold the LAIC name badge according to the 'boys' working definition. It's really a bit of a dubious honor here at Mid-Chapparal (See? I can't even get us qualified to be High Chapparal. *sigh*) to be declared as LAIC.

So back to the fake thing...I know it looks like I'm super organized and full of vim and vigor but sometimes I fake it 'til I make it. And I've been fakin' it a lot these days. By the

Bloomin' Onion Bread and Bacon Cheddar Ranch Blossom Bread Guilt Free Low Carb Gluten Free

Bloomin' Onion Bread and Bloomin' Ranch Bread - It's Bloomin' Diabolical Deliciousness! You can just call it Crack Bread if ya wanna!

Bloomin' Onion Crack Bread shouldn't be
low carb and gluten free, but it is...this is a true story!
It all began with that danged ol’ bloomin’ onion bread picture on Pinterest. *sigh*

I’m serious. Obsession glommed onto me like nobody’s beeswax and I knew I had to recreate it in Susie’s Low Carb Gluten Free World. That bread had to live here in my world or I’d just bust!

See? This is what’s wrong with me.

I lust.

I do.

I lust after food.

I wish it didn’t have to be this way. I wish I was an eager overachiever who only thought about health and fitness and who lusted after lunges or sprints or lifting large masses. Instead, the only large mass I consistently lift is my “assssspirin bottle” from one

Fluffy Chix Cook Has a Featured Post on Recipe Lion for Memorial Day

Memorial Day Blessings and Thanks
to those who fight and fought to
keep us free!
Wow, we are honored and excited to participate in Recipe Lion's Memorial Day blog post. Matthew over at Recipe Lion posted about it today and I feel so honored to have a feature. I just thought it would be a little paragraph and a recipe. Turns out it's a complete meal and he included the entire Memorial Day Menu!

I'm very excited because these articles and coverage are among the first pieces of exposure for Fluffy Chix Cook! And Fluffy Chix Cook is grateful for the validation and confirmation that the track and vision of FCC is on target!

Joe over at Craving Sugar News has also been very awesome to include Fluffy Chix posts and I hope that little by little (and with your help too!) word is getting out. We'd ultimately love it if Fluffy Chix had tons of people runnin' around playin' in our tiny acre of Texas!

Hope you will go check out both Memorial Day posts:

Low Carb Zucchini Fries and Yellow Squash Fries Too

Big Green Monsters, Fluffy Little Tails and Sneakin Around in the Dark...

Zucchini and Yellow Squash the bunnies of
the garden!
You’ve all heard about the Easter Bunny, right?

I lived the life of a Texas Transplant for a few years in my misspent 20-somethings. Living in the wilds of Denver, Colorado, just 6 blocks from Washington Park in an old neighborhood called Old South Gaylord, truly felt like a whole other life.

Old South Gaylord was a picturesque little neighborhood, filled with incredible people, and soooo different from Texas - my beloved state to thee I sing.

What are the odds, but I met another Texas Transplant only 3 doors down? What a fun time in our life! We’d sit out on the front porch every night and would all yell over at all the neighbors sitting on their porches.

And oh my, the crazy Front-Porch-Martini-Parties we’d throw! FUN! This would go on all summer long. I

Chile Lime Coleslaw - Perfect for Memorial Day

The "Boys" - Kevin, Buddy, Tony, Schylling, Zippy,
their little dog WeeWee and WeeWee's baby, Skeeter
protesting Chile Lime Coleslaw in "Occupy OakLane".
Chile Lime Coleslaw...It's Low Carb, It's Paleo Friendly...but still isn't Sock Monkey Approved.

This is a true story…

It’s a story of terror. Of heat. Hot Texas nights and cold sweats.

Many of you will take one look at the ingredients listed here and say, “Oh no she ‘itn’t! No way! I’m not loco! Pshhhaw!”

I know. Many of you might be right.

The ‘boys’, you remember our sock monkey boys: Buddy, Tony, Kevin, Schylling, Zippy, and their little toy dog WeeWee, and WeeWee’s baby Skeeter, all think I’m nuts.

I think they may have a touch of PTSSD (post traumatic simian stress disorder), cuz they say, “Mom, you’re not makin’ that insane salad crap are you?”

And I see them quake just a tiny bit.

Low Carb Gluten Free Wiener Schnitzel

Low Carb Pork Cutlets frying in olive oil in a teflon pan!
“Susie.”

“Yes?”

“We need to talk.”

“Is this my Conscience again?”

“No.”

“Is this God?”

“No.”

“It would be more fun if we did this as a Knock Knock joke, you know.”

“That’s trite. I don’t do Knock Knock.”
