First of all I have to apologize to the academy. My pic of the Mighty Blue Cheese Juicy Loosey is an old image. I was too incredibly, PSYCHOLOGICALLY starved at the mere thought of this beauty, there was no way I wasn't gonna sit down and enjoy it piping hot and melti-licious as soon as it came off the fire.

There I said it. By the time these bad boys were off the grill and on our plate, it was as if my tummeh was sayin’, “Get. In. Mah. Belleh!”

And who am I to argue with “the man?”

Now Susie’s turning out such derivative drivel as telling me how to make a sandwich with store bought rotisserie chicken. What a crock of horse puckies!

Low Carb Cornbread in Time for Low Carb Thanksgiving Turkey and Dressing

Apologies for being late with this recipe and with the absence of pictures. I wanted to at least get it out there for anyone who wants or feels like being a recipe tester! I hope to get to test it before Thanksgiving Day, but the way the week is looking, I don’t see it happening. When I do test it, I will place photos in this recipe and confirm the rating.

This is a test recipe. I’m putting it up because if any of you want to make a low carb version of our grandmother, WaWa’s Dressing, this low carb cornbread recipe will help you make the dressing low carb. It is such a delicious high carb dressing, that I can’t imagine it wouldn’t be awesome as a low carb version.

Weekends felt special, growing up in our family. It seemed like every weekend,  three houses of neighbors and their bazillion kiddos got together and had a party.

The dad’s cooked something up on the grill or pit. The mom’s made great sides and desserts and through it all, our WaWa (Daddy’s mom) would solidly pitch in to help cook and also smooth the madness that was constant activity among the Gibbs family, the neighbors and kids running helter skelter. She was the running board on our sailing ship. Without WaWa, we were difficult to direct.

*Warning: Some people with gluten sensitivities have problems with oats. Although oats do not contain the same kind of gluten found in wheat, there is sometimes cross contamination due to the fields where oats are grown. Additionally, there may be cross-contamination in the processing plants where the same plant processes grains that contain gluten. If you cannot handle oats (I use Bob's Red Mill certified gluten free rolled oats) - then please sub out another fiber like rice bran or hemp or maybe even a bean flour for the oat fiber called for in the Bread Mix.

I know we just did Revolution Rolls, but I wasn’t kidding when I told you in the Basic Revolution Roll post that there are more versions of this recipe than Carter has little liver pills. I use the Revolution Roll batter with a little tweak to make slider rolls and focaccia too. 

It's so versatile! This recipe uses coconut flour. Coconut flour is de-fatted flour made from…you guessed it - coconuts! (Thanks to my friend, Dottie, an admin over on the LCF – Low Carb Friends board for the suggestion!)
If you eat a controlled carb diet, you need coconut flour.
