Salmon Salad Niçoise – IS the Big Salad

Ah yes, the “big salad” of Seinfeld fame. I can’t help but think of Elaine every time I build a salad – which is daily.

I have at least one “big salad” per day. I admit it. They take different flavors and I would rival any of my big salads against the ones featured at the Seinfeld diner.

I play favorites, too. My current favorite big salads are a chopped salad, which I make almost every evening as part of our supper, and the more artfully arranged, Queen of Composed Salads – the Niçoise Salad, that’s a meal in and of itself.

I call the Salad Niçoise a “destination salad” because you don’t just “happen” or back into this salad. You plan and take measures to arrive at the Salad Niçoise as your main course. And oh my, the scenery in the making is outstanding. It is a deliberate and proud salad.

Texas Armadillo Eggs - Have Grill Will Travel

This is a leftover love story. What I really mean is this is a love story about leftovers. Done correctly, "leftover" is not a four letter expletive! I actually love leftovers when they can be disguised and morphed into a completely different dish!

No. The chicken breasts in this story aren’t leftover! But the Armadillo Eggs themselves are meant to be leftover. So make lots, okay?

Armadillo Eggs taste divine in their own right, but used in the next recipe comin’ your way, well they become transcendent. You might just cry from taste bud overload.

But why are they called Armadillo Eggs, you might ask? Good question from the little lady in the first row. They’re big. Very big. And they’re egg shaped. And I don’t have a lot of creativity. Meh. And the name amuses the ‘boys.’ So they’re Armadillo Eggs.

You’ve all heard about the Easter Bunny, right?

I lived the life of a Texas Transplant for a few years in my misspent 20-somethings. Living in the wilds of Denver, Colorado, just 6 blocks from Washington Park in an old neighborhood called Old South Gaylord, truly felt like a whole other life.

Old South Gaylord was a picturesque little neighborhood, filled with incredible people, and soooo different from Texas - my beloved state to thee I sing.

What are the odds, but I met another Texas Transplant only 3 doors down? What a fun time in our life! We’d sit out on the front porch every night and would all yell over at all the neighbors sitting on their porches.

And oh my, the crazy Front-Porch-Martini-Parties we’d throw! FUN! This would go on all summer long. I

Imagine my surprise, tooling along on Day 10 of a 2Week Atkins Re-Induction adventure. Happy, care free. Not a thought in my head. Except supper, or dinner by any other name. And I started hankerin’.

That’s right.

I hanker – especially around the 3 o’clock p.m. Witching Hour. Don’t hate.

I started hankerin’ after a photo I saw on Pinterest for this gorgeous zucchini ribbon salad. Now let’s understand this. I don’t eat raw zucchini. In fact, I have only eaten zucchini, raw, on one occasion in my life. I was 10 years old and Mama decided to “try it out.” She decided to throw a test balloon into the family atmosphere and see how it flew.

We loved it! Everyone, including the family dog, “Cat,” loved it! Understand, back in the 70s when Ranch was new, its popularity blazed like a comet! Why, in Texas,

But how many minutes do you spend reading the labels on the backs of the salad dressings in the condiment isle at the store? What on earth do you make with Un-Corned Beef, you ask? Making a Reuben sandwich tops my list. The best Reuben comes from corned beef made in New York and is served on dense, rustic, pumpernickel rye bread. It’s toasted on a griddle with gooey Swiss cheese and gobs of butter and is served topped with crispy, salty sauerkraut and mildly sweet Russian dressing. Oh my gosh, where’s my drool cup when I really need it?
