Low Carb Zucchini Fries and Yellow Squash Fries Too

Big Green Monsters, Fluffy Little Tails and Sneakin Around in the Dark...

Zucchini and Yellow Squash the bunnies of
the garden!
You’ve all heard about the Easter Bunny, right?

I lived the life of a Texas Transplant for a few years in my misspent 20-somethings. Living in the wilds of Denver, Colorado, just 6 blocks from Washington Park in an old neighborhood called Old South Gaylord, truly felt like a whole other life.

Old South Gaylord was a picturesque little neighborhood, filled with incredible people, and soooo different from Texas - my beloved state to thee I sing.

What are the odds, but I met another Texas Transplant only 3 doors down? What a fun time in our life! We’d sit out on the front porch every night and would all yell over at all the neighbors sitting on their porches.

And oh my, the crazy Front-Porch-Martini-Parties we’d throw! FUN! This would go on all summer long. I

Chile Lime Coleslaw - Perfect for Memorial Day

The "Boys" - Kevin, Buddy, Tony, Schylling, Zippy,
their little dog WeeWee and WeeWee's baby, Skeeter
protesting Chile Lime Coleslaw in "Occupy OakLane".
Chile Lime Coleslaw...It's Low Carb, It's Paleo Friendly...but still isn't Sock Monkey Approved.

This is a true story…

It’s a story of terror. Of heat. Hot Texas nights and cold sweats.

Many of you will take one look at the ingredients listed here and say, “Oh no she ‘itn’t! No way! I’m not loco! Pshhhaw!”

I know. Many of you might be right.

The ‘boys’, you remember our sock monkey boys: Buddy, Tony, Kevin, Schylling, Zippy, and their little toy dog WeeWee, and WeeWee’s baby Skeeter, all think I’m nuts.

I think they may have a touch of PTSSD (post traumatic simian stress disorder), cuz they say, “Mom, you’re not makin’ that insane salad crap are you?”

And I see them quake just a tiny bit.

“Susie.”

“Yes?”

“We need to talk.”

“Is this my Conscience again?”

“No.”

“Is this God?”

“No.”

“It would be more fun if we did this as a Knock Knock joke, you know.”

“That’s trite. I don’t do Knock Knock.”

Low Carb, Gluten Free Lemon Blackberry Ice Cream

Low Carb Gluten Free Lemon Blackberry
Buttermilk Ice Cream so good, you may
just drink the mix without freezin' it! I did... *blush*
Update Completed! Recipe Ready...

Howdy sweetie pies! Coming soon to a blog near you (here)...Low Carb Lemon Blackberry Buttermilk Ice Cream...

This is the soft serve state immediately post-churning in my oh-so-ancient Donvier Mama & Daddy gave me for my 21st birthday back in school. It's already hot and muggy in Hell, er, I mean Houston and so it was meltin' at a pretty fast clip! But it still ate good!

Looks good enough to eat, doesn't it?

Yeeehawwww! Guess how many grams of net carbs are in it per 1/2c serving?

Go ahead. Guess.
You'll never guess (unless you read the comments of the Revolutionary Hot Dog Bun post for the hint.)

See ya back here late this afternoon or early evenin' after we finish ropin' the goats and feedin' the hogs and stuff...

Revolutionary Low Carb Hot Dog Buns, Sandwich Rolls and Wraps

All Low Carb! All The Time! Hehe! Low Carb Rolls and Wraps That Will Have You Feelin' The Love!

Low Carb, Gluten Free Revolutionary Buns make
weekend fun-time grilling something to look forward to again.
Weekends felt special, growing up in our family. It seemed like every weekend,  three houses of neighbors and their bazillion kiddos got together and had a party.

The dad’s cooked something up on the grill or pit. The mom’s made great sides and desserts and through it all, our WaWa (Daddy’s mom) would solidly pitch in to help cook and also smooth the madness that was constant activity among the Gibbs family, the neighbors and kids running helter skelter. She was the running board on our sailing ship. Without WaWa, we were difficult to direct.

Low Carb, Diabetic Friendly, Anti-Cancer Paleo Super Hero Goes Lemon Yellow for Mother's Day!

Low Carb Lemon Rosemary Cupcake with Sugar Free
Lemon Cream Cheese Icing gets infused with
Tart Lemon Buttermilk Ice Cream Mix - also low carb!
A funny thing happened on the way to the hot dog stand.

Remember I claimed yesterday on facebook that I would be posting the Revolutionary Low Carb Hot Dog Buns and Revolutionary Wraps today. I wanted to get that post in for you to have in time for Memorial Day grill-outs! Wahhhh! Mea culpa!

Sorry to you mommys out there where ever you may be! I almost completely forgot Mother’s Day is this Sunday.

So here’s a reminder you all! Go get your flowers and sweet thoughts and cards. Both Denny’s and my mamas are celebratin’ with our Lord this year and are too far away for our cards and baked offerings to make it to them in time, and our sock monkey boys look innocent, but their memory’s are worse than mine - so no Mother's Day cards or presents from them!  *sniff*

I interrupt this regularly scheduled Hot Dog Post to bring you the amazing. The fantastic. The one of a kind, Lemon Upon Lemon Upon Lemon Low Carb Cupcakes and Low Carb Buttermilk Ice Cream recipe – just in time for Mother’s Day! Not a spec of gluten anywhere!

Low Carb Gluten Free Soy Free Flour Tortillas

Texas! The land of Tex Mex, Tex Ritter, Boot Hill and now...the Low Carb GF SF Flour Tortilla

Low Carb GF SF Flour Tortillas make this Fauxtato,
Egg and Cheese Breakfast Taco a daily taste treat.
What if I promised you a pony?
Ok, I would like to give you a pony but your significant other would probably have my head on a platter and although low carb, it would not be good eats. Some people thrive on monkey brains, but mine aren’t so hot these days – post chemo!

So instead, what if I promised something simple?

Oh like, what if I promised you lifelong satisfaction, longevity, and a comfortable way of eating?

Ok, that still sounds a little lofty.

What if I promised you would never crave TexMex again?

Parmesan Crusted Stuffed Revolution Rolls

A Cheese Delivery System Inside a Cheese Delivery System Wrapped in Cheese!

Wahhhh! Robert Petry!
Remember when we were kids?

One of us would say, “Pretend that I’m…blah, blah, blah.”

And you would say, “Ok! Pretend I’M the mother and…”

Well, as we like to say in Texas, "This is a true story. We do hope you try this at home. No prior experience necessary - amateurs welcome."

I think this image says it all.

Don’t you?

Would you be disappointed if I tell you that although there is a “story” and there is a recipe, no corroborating photos exist?

If a tree falls in the forest, and no one is there to hear it, does it still make a sound?
