Chicken Avocado and Blue Cheese Sandwich with Garlic Aoli is Perfectly Low Carb

You might be forgiven for the immediate blasphemous cursing erupting from your mouth at this very moment. I hear you. I do.

Satisfying and low carb too. This chicken sandwich bears no
resemblance to our old high carbage days.
You’re saying, “Who the hayull (Texan for h-e-double ut oh) does she think she is? *snort* She’s now demonstrating how to be an even bigger waste-of-blog-space than she has in months past.

Now Susie’s turning out such derivative drivel as telling me how to make a sandwich with store bought rotisserie chicken. What a crock of horse puckies!

Next thing you know, she’ll be showin’ me how to boil water! Razzafrazzin’ rumplemazzin’ curfufflesplazzle #%@@@@#$#$#$@$^$^#@$$!!!!!!!”

So on that note, please be sure to join me next week as we explore the mysteries of boiling water. *evil grin*

Low Carb Enchiladas Verdes - Lazy Leftovers Strike Back

Hatch Green Chile Fest continues to reign supreme in kitchen stadium!

Low Carb Green Enchiladas with Pork or
Enchiladas Verdes de Puerco - gluten free (if you can have
dairy), Paleo and diabetic friendly. And the best part?
They are Girlish Figure Approved (GFA!)
A moment on the lips,
forever off your hips!
I figured for once you might appreciate if I finish an idea thread with all the associated recipes before running off on another tangent! I hope by now you aren’t bored with the whole Green Chili Festival thing! We have so many recipes to explore! The next two posts will be recipes that build upon using an element or elements of things already made. Let’s call them Lazy Leftovers. Or Sloppy Seconds – your pick!

One of the things I love about planned abundance – that’s a nice way to say, “That Susie, she cooks like she’s cooking for 10 people instead of 2 adults, 5 sock monkeys, a little toy dog, a stuffed giraffe, and the little dog’s stuffed sock monkey baby. Hey wait! That is almost 10 isn’t it? But none of the menagerie eat much…

So one of the things I love about cooking in batches is that it allows me to morph dishes into really fantastic complex, multi-step dishes at a moment’s notice and with little effort. I look like a culinary wizard, but really I’m just Lazy Susie, taking shortcuts and scoring points in the kitchen.

Oven Fried Green Tomatoes a Low Carb Summer Sensation

Tomatoes Make June Heat Waves in Texas Totally Worth It!

Low Carb and Paleo Friendly to many, Oven Fried Green
Tomatoes make a great side for Barbequed Pulled Pork and
Coleslaw!
Summertime and the livin’ is easy! Fish are jumpin’ and the cotton is high.

June in Texas is more than Gershwin tunes and tall cotton! June means triple digit thermometer readings. On the Gulf Coast, June means the hurricane watch begins and will continue into September. But June, means something else in Texas.

June means tomato season busts wide open and between now and about mid-July, it isn’t rainin’ men (thank you to The Weather Girls for helping me continue my musical theme), heck, it isn’t rainin’ much of anything. Texas is in a drought, you know!

Nah, I think this song best describes the affinity I feel towards homegrown tomatoes. Wish I could embed the video but maybe you'll go listen to the link. Apparently there are others who feel as I do! :) http://www.youtube.com/watch?v=1-QzLIjL1u4 (Homegrown Tomatoes by Guy Clark).

Kent Altena's Jamaican Jerk Chicken is Awesomeful of Awesomeness

Sometimes Jerki-ness is good - when it's Caribbean Jerk, mon!

Kent's Jamaican Jerk Chicken and Pork makes
ya feel like dancin' to reggae mon!
My buddy Kent Altena and his missus attended the Low Carb Cruise to Jamaica not long ago. They returned, inspired by visions of Jamaican Jerk and reggae in the night. Kent came back a craivin’ kind of guy. Inspired by the abundance of excellent low carb cooks on board, great food and inspiration and visions of Caribbean dancing in his head, it didn’t take him long to dream up a cure for the modern Jerk jones.

Please take the time to visit Kent’s site, Atkin’s Diet Geek and read his terrific recipe – then don’t forget to mark a reminder on your calendar to make it! He has a very good video tutorial on YouTube where he demos the recipe. Don’t forget to take notes on his grilling technique! Grilling bone in chicken pieces is not an easy feat, my friend, but Kent de-mystifies the process! Way to go, Kent!

I have to admit, I don’t have much experience with Caribbean cuisine. Prior to test driving this baby, I’m ashamed to admit my only run in with jerks was

Healthy Oven Fried Fish Rocks Low Carb - Just In Time For Good Friday

The Fluffy Chix Oven Fried Fish recipe morphs two ideas into one easy dish! We were children of the 60s. And of Luby’s Cafeteria. In Houston during the 60s, cafeterias ruled. We had Piccadilly, Wyatt’s, Cleburn’s and Luby’s among others. But nothing could beat the LuAnn Platter at Luby’s.

I could talk for hours about how the flaky fish seemingly dissolved on the tongue or how I greedily rationed each heavenly, crispy crumb of breading. I would eat the mac 'n cheese delicately, one elbow at a time. Ahhhh the innocence of youth!

I didn't know! Sure I was a roly poly kid, but Mom always told me I was big-boned. *wink wink* No really, she blamed it on the steroids I took most of the first 11 years of my life.

St. Patrick's Day Pan Roasted Root Vegetables

These Pan Roasted Root Vegetables Bring Tears To Darby O'Gill's Smilin' Eyes!

Pan Roasted Root Vegetables - Rutabaga, Turnips &
Cabbage with Boiler Onions and Carrots
There’s more than one way to skin a Killarney cat!

What do you think of when you think of roasted vegetables these days? When I think about roasting, I think of high temperatures and ovens. St. Patrick’s Day Pan Roasted Root Vegetables are as far away from the oven method as the highlands to the sea.

Since it’s already spring in Hell, Texas (aka Houston), I want to use my oven as little as possible for as short of a time as possible. St. Patrick’s Day Pan Roasted Root Vegetables treat you to a taste
