We grew up eating Southern comfort food. I am a product of my upbringing. I adore creamy, comfort-y food. It may get boring to you guys that FCC doesn’t post as many “Mediterranean,” “clean-looking,” “healthy-looking,” “light dishes.” I cruise the diet sites and think, “Wow, those are beautiful dishes, I should start making more of 'those'." (Fill in your “those” blank, now.)

The reality is, I do make “those” dishes now and then…mainly in the summer, when it’s hot as hades here in H-town; when we’re all sittin’ around in our underwear, fryin’ eggs on the sidewalk. Then it’s “light foods,” and salads, and Mediterranean food.

Unless you were just dropped off the turnip truck last week, you’ve heard about Crack Slaw. Heck, maybe you’ve even made it. The recipe is legion and has been flying around the low carb world as long as I’ve been around (over 14 years) and maybe longer.

It’s an unlikely recipe for such fame. It’s simple food. Maybe even peasant food. But it has the 3 mysterious components that when combined, goes viral with enthusiasm: cheap, easy, delicious. That’s it.

Who says simple equates to boring? Sometimes I’m the most grateful for the simple, quick meals we throw together and enjoy in all their glory! This entire meal came together in less than 20 minutes from icebox (that’s Texan for refrigerator) to table. Of course I did have quite a bit of help from the grill-meister, Denny Crane who made FANTASTIC Moroccan Pan Seared Chicken Fingers while I made the Lemon and Thyme Scented Pan Roasted Brussels Sprouts!

I hear a lot of people grousing about “having to eat leftovers.” A friend’s hubby is very vocal about eating leftovers (or rather, NOT eating leftovers.) But learning to love leftovers is in your best interest. It’s convenient, saves food loss, saves electricity and labor time cuz you can cook once and eat many times, and it helps you adhere to your eating plan. In short, leftovers are “no brainers.” In fact, we love and depend on them so much, I call them “lucky leftovers.”

Oh my gosh, what if the hostess serves a meal filled with carbs? How do I tell my hostess that I'm dieting? Or worse, I don't want to let anyone know I'm on a special diet or that "whacky, fad diet, Atkins." How do you handle eating out--at a restaurant or someone's house without a lot of fretting?

I asked you guys to vote on your next post here on Fluffy Chix Cook. The majority voted to do Chile Rellenos, but one of the last comments struck a chord. The person mentioned that I had been concentrating on Tex-Mex too much.

Now, for a Texan those are fightin’ words. You could almost lose your card-carryin’ status if you were to say something that heretical. A Texan is born and raised on Tex-Mex and if you don’t eat it at least twice a week your tummy will think your throat’s been cut. And that craving doesn’t ease if you leave the state, either. You will miss and pine for Tex-Mex and the specific essence of Texana the rest of your life.

My buddy Kent Altena and his missus attended the Low Carb Cruise to Jamaica not long ago. They returned, inspired by visions of Jamaican Jerk and reggae in the night. Kent came back a craivin’ kind of guy. Inspired by the abundance of excellent low carb cooks on board, great food and inspiration and visions of Caribbean dancing in his head, it didn’t take him long to dream up a cure for the modern Jerk jones.

Texas Chicken Pizzaiolo translates to the Pizza Maker’s Chicken – Texas Style! Why do I call it Texas Style? Well because there are big honking jalapenos and goat cheese involved and jalapenos and goat “anything” is almost synonymous with Texas. Look up Texas on Wikipedia. You’ll see a goat and a big honking jalapeno. Would I lie to you?

Texas Chicken Pizzaiolo really translates into a marriage between three leftovers and cheese – the lovely cheese - that scrumptious cement that binds. This is a leftover love story. What I really mean is this is a love story about leftovers. Done correctly, "leftover" is not a four letter expletive! I actually love leftovers when they can be disguised and morphed into a completely different dish!

No. The chicken breasts in this story aren’t leftover! But the Armadillo Eggs themselves are meant to be leftover. So make lots, okay?

Armadillo Eggs taste divine in their own right, but used in the next recipe comin’ your way, well they become transcendent. You might just cry from taste bud overload.

But why are they called Armadillo Eggs, you might ask? Good question from the little lady in the first row. They’re big. Very big. And they’re egg shaped. And I don’t have a lot of creativity. Meh. And the name amuses the ‘boys.’ So they’re Armadillo Eggs.
