Low Carb Chicken Pot Pie - Deconstructed
![]() |
Deconstructed low carb chicken pot pie (with a Mozzarella Stuffed, Parmesan Crusted Revolutionary Roll just cuz we can)! |
The reality is, I do make “those” dishes now and then…mainly in the summer, when it’s hot as hades here in H-town; when we’re all sittin’ around in our underwear, fryin’ eggs on the sidewalk. Then it’s “light foods,” and salads, and Mediterranean food.

Jambalaya Crack Slaw is a twist on normal Crack Slaw made with ground beef. Jambalaya Crack Slaw features chicken, sausage and shrimp. |
It’s an unlikely recipe for such fame. It’s simple food. Maybe even peasant food. But it has the 3 mysterious components that when combined, goes viral with enthusiasm: cheap, easy, delicious. That’s it.

Chicken Avocado and Blue Cheese Sandwich with Garlic Aoli is Perfectly Low Carb
You might be forgiven for the immediate blasphemous cursing erupting from your mouth at this very moment. I hear you. I do.
![]() |
Satisfying and low carb too. This chicken sandwich bears no resemblance to our old high carbage days. |
Now Susie’s turning out such derivative drivel as telling me how to make a sandwich with store bought rotisserie chicken. What a crock of horse puckies!
Next thing you know, she’ll be showin’ me how to boil water! Razzafrazzin’ rumplemazzin’ curfufflesplazzle #%@@@@#$#$#$@$^$^#@$$!!!!!!!”
So on that note, please be sure to join me next week as we explore the mysteries of boiling water. *evil grin*

Easy Asian Dino Wings a Perfect Weeknight Supper
You had me at easy. But now you're just talking trash by callin' these cheap...
Full Recipe: $5.35
Per 2 Leg serving: $0.90 each
I asked you guys to vote on your next post here on Fluffy Chix Cook. The majority voted to do Chile Rellenos, but one of the last comments struck a chord. The person mentioned that I had been concentrating on Tex-Mex too much.
Now, for a Texan those are fightin’ words. You could almost lose your card-carryin’ status if you were to say something that heretical. A Texan is born and raised on Tex-Mex and if you don’t eat it at least twice a week your tummy will think your throat’s been cut. And that craving doesn’t ease if you leave the state, either. You will miss and pine for Tex-Mex and the specific essence of Texana the rest of your life.

Kent Altena's Jamaican Jerk Chicken is Awesomeful of Awesomeness
Sometimes Jerki-ness is good - when it's Caribbean Jerk, mon!
My buddy Kent Altena and his missus attended the Low Carb Cruise to Jamaica not long ago. They returned, inspired by visions of Jamaican Jerk and reggae in the night. Kent came back a craivin’ kind of guy. Inspired by the abundance of excellent low carb cooks on board, great food and inspiration and visions of Caribbean dancing in his head, it didn’t take him long to dream up a cure for the modern Jerk jones.
Please take the time to visit Kent’s site, Atkin’s Diet Geek and read his terrific recipe – then don’t forget to mark a reminder on your calendar to make it! He has a very good video tutorial on YouTube where he demos the recipe. Don’t forget to take notes on his grilling technique! Grilling bone in chicken pieces is not an easy feat, my friend, but Kent de-mystifies the process! Way to go, Kent!
I have to admit, I don’t have much experience with Caribbean cuisine. Prior to test driving this baby, I’m ashamed to admit my only run in with jerks was

Texas Chicken Pizzaiolo - It's Texan, Low Carb and Paleo! Yeehaw!
Oh Texas Chicken Pizzaiolo How I love Thee. You Paragon of Leftovers Complete Me!
As I mentioned in the Armadillo Egg post, this is a love story devoted to leftovers.
Texas Chicken Pizzaiolo translates to the Pizza Maker’s Chicken – Texas Style! Why do I call it Texas Style? Well because there are big honking jalapenos and goat cheese involved and jalapenos and goat “anything” is almost synonymous with Texas. Look up Texas on Wikipedia. You’ll see a goat and a big honking jalapeno. Would I lie to you?
Texas Chicken Pizzaiolo really translates into a marriage between three leftovers and cheese – the lovely cheese - that scrumptious cement that binds. Armadillo Eggs, Roasted Tomatoes (recipe follows), and Pizza Sauce (recipe follows) layer to make a breathtaking entrée that will never resemble leftovers. In fact, you will love it so much, it might take the place of Chicken Parmigiana!

Texas Armadillo Eggs - Have Grill Will Travel
Sometimes Havin' A Plan, Especially a Plan for Leftovers Makes Life Easy.
This is a leftover love story. What I really mean is this is a love story about leftovers. Done correctly, "leftover" is not a four letter expletive! I actually love leftovers when they can be disguised and morphed into a completely different dish!
No. The chicken breasts in this story aren’t leftover! But the Armadillo Eggs themselves are meant to be leftover. So make lots, okay?
Armadillo Eggs taste divine in their own right, but used in the next recipe comin’ your way, well they become transcendent. You might just cry from taste bud overload.
But why are they called Armadillo Eggs, you might ask? Good question from the little lady in the first row. They’re big. Very big. And they’re egg shaped. And I don’t have a lot of creativity. Meh. And the name amuses the ‘boys.’ So they’re Armadillo Eggs.

Dang! Green Chili Chicken Enchilada Stack - now that’s a mouthful, and you haven’t even picked up a fork yet. Green Chili Chicken Enchiladas epitomizes Tex Mex comfort food at its best. I hear ya. You’re sayin’, but where is the red sauce? Where is the enchilada sauce?!!!
Sometimes it’s good to go green! I could even go so far as to call this a king among Tex Mex

Green Chili Pulled Chicken Jalapeno Poppers served with fresh salsa, guac and sour cream. |
In the old days, when my sisters and brothers and I were growin’ up – yes, we grew up in the olden days. We had black and white tv’s and there was no such thing as a cell phone, and Al Gore hadn’t invented the internet yet…
But when we were growin’ up, Texas was divided into 2 kinds
