Low Carb Chicken Pot Pie Deconstructed

Day 13 – 2Week Atkins Induction

Low Carb Chicken Pot Pie Deconstructed with
Mixed Green Salad and Stuffed Crust Revolution Rolls.
I’ve fallen way behind and the faster I run, the behind-er I get! “Helpmay Jasus!”
This is going to have to be a flyby visit and post for Day 13 so I can catch up with Day 14 and the post about results!

Be sure to check back often, because I will come back over the next couple of weeks and post many recipes from the last 2 Week Induction Challenge. I’m so excited to get these recipes out for you! (Yes, both of you reading, you know who you are!)

Had a most excellent Saturday, we walked. We talked. We watched NASCAR racing. And I cooked and played in the kitchen. No stresses or worries and no schedules. What a blessing to have a day like Saturday! I came up with a very credible low carb chicken pot pie. *drool*

Tomato Feta Stack and Mustard Glazed Salmon

Day 12 - 2Week Atkins Induction

Dr. Seussesque Tomato Feta Stack with
Mustard Glazed Salmon
Thanks for being patient. I took yesterday off, blog-free. I needed to rest and refuel my engines! But never fear, I still remained a sturdy and stauch Inductioneer. I’m on the downhill side of the most restrictive period of Atkins Induction (and also Phase I of South Beach).

This post is actually about Friday’s nutrition and menus. It was another Fasting Meatless Friday – always a challenge in a home headed by a meat-and-taters guy, and 5 sock monkey boys who also think meat and potatoes (and bananas) hung the moon. No, I can’t forget the bananas for the boys. They have them at every meal and

Low Carb Pizza - Revolution Style

Day 11 – 2Week Induction

Day 11 Menus and Totals

2 Poached Eggs
1 c Zucchini Ribbon Salad with Feta Mint Cucumbers
3 c Decaf Coffee, black, unsweetened

(Note: This day is mostly about creative re-purposing of leftovers. It's why I always cook for 4, when there's only 2. That way, I know with reasonable assurance, I can whip a meal together in a much shorter amount of time than if I had to make each thing from scratch, on the fly.)

A Free New Atkins For A New You Book Could Be Yours

Great news! I corresponded with the Atkins folks and am happy to report, they totally want to sponsor part of the May 1 drawing.

Atkins will be donating books for two lucky winners! The New Atkins For A New You by Dr. Eric C. Westman, Dr. Stephen D. Phinney, and Dr. Jeff S. Volek features personalized meal plans, a ton of new recipes and you get to meet people like you and me who’ve achieved success in this lifelong eating program.

I have seen so many people from a first-hand perspective lose over 100 and 150 pounds. Some have lost even more! I know of more than a handful who have lost over 250 pounds.

I'm tellin' ya! I. CAN. NOT. Make this stuff up! I can't. I'm not that creative! And I didn't believe it till I saw it with my own eyes, "Hey y'all, watch this!" Hells I'm the worst cheater on the face of the earth and as of today, I've personally lost over 83 lbs and countless inches from my ass!

The New Atkins For A New You redefines and refines the original groundbreaking work by Dr. Robert Atkins and expands on the original tenets of his diet philosophy - control those carbs at or below your personal level for losing and you control health and enhance wellness.

The book cover claims you can "Lose Up To 15 Pounds in 2 Weeks" and that's no lie. Although, I'm a turtle, I've been eating this way long enough over the last 12 years or so to have personally seen it happen for many! Some have lost even more.

Even though I was already low carb when I began my 2 Week Induction Challenge, I've still lost over 5 pounds and have lost over one inch from my non-boob chest (hello back fat), waist and hips!

Score! Yeah, baby! That's what I'm talkin' 'bout! The scale can lie all it wants, but you can't argue with the measuring tape. Talk to the measuring tape!

Low Carb Chili Dogs With Buns on Atkins? Now That's Inductioneering!

Day 10 – 2Week Induction Challenge

When was the last time you were able to pick up a chili dog
with your hands and eat it while low carbing?
I will keep this post short since I already posted a long one this morning. Check out the Zucchini Ribbon Salad thread if you haven’t already! It’s TLF (To Live For)!

I’m happy to say I had an awesome Day 10. Delicious food, Induction Legal, left me hunger-free and happy. Oh yeah, I’m happy when my tummy is happy – and full! I also had good news on the scale – 232.4lbs. Yes!

Thanks to my cool hotdog buns made from my basic Revolution Roll recipe, I had amazing! I do mean. AMAZING chili dogs I actually held in my hand – no fork required. What a FUN-ctional food!

Zucchini Ribbon Salad - a light, refreshing
accompaniment to any protein!
Imagine my surprise, tooling along on Day 10 of a 2Week Atkins Re-Induction adventure. Happy, care free. Not a thought in my head. Except supper, or dinner by any other name. And I started hankerin’.

That’s right.

I hanker – especially around the 3 o’clock p.m. Witching Hour. Don’t hate.

I started hankerin’ after a photo I saw on Pinterest for this gorgeous zucchini ribbon salad. Now let’s understand this. I don’t eat raw zucchini. In fact, I have only eaten zucchini, raw, on one occasion in my life. I was 10 years old and Mama decided to “try it out.” She decided to throw a test balloon into the family atmosphere and see how it flew.

We loved it! Everyone, including the family dog, “Cat,” loved it! Understand, back in the 70s when Ranch was new, its popularity blazed like a comet! Why, in Texas,

Scale Addiction And The Addict It Controls

Day 9 - 2Week Atkins Induction - Owning Unsuccessful Behaviors, The First Step Toward Change

Spicy Zucchini Hash, Fried Egg and Turkey Pan Sausage
Hello, my name is SusieT, and I’m an addict.

They say the first step is admitting you have an addiction. “They” say that confession frees the soul and mind. They say the first step will lead to more steps.

Well, I'm here because I'm an addict.

The scale owns me. Except my soul. That’s firmly in our Lord’s control. But I’m pretty sure the rest of me owes my behonkus to the scale.

I am the scale's little bitch.

Linner With Beck's - The Induction Friendly Low Carb Late-Lunch-Early-Dinner

Day 8 - 2Week Atkins Induction - Dang! Why Is It So Easy To Eat Out on Induction?

UPDATED: Daily Menu and Totals for Day 8 are posted. Thanks for your patience!

Half Dreamland from Beck's Prime. Is this heaven? Or
am I just in Dreamland?
We’re one trick ponies. I know you think we’re chix. But we’re really one trick ponies. Ok, we're one-trick-pony-chix and Denny is the HRIC (Head Rooster In Charge).

When we find something or someplace where our needs are met, we’re happy, secure, and satisfied with life. We get comfortable. And that is pretty much the story of our “eating out” life. Our dining life. There are a handful of places Denny and I really enjoy and if the name of your restaurant isn’t one of those places, too freakin’ bad Dirty Harry, cuz you won’t have a chance to “make my day.” Nor Denny’s either.

Saturday Mornings With BOB (Breakfast On a Bun) and Daddy

Day 6 - 2Week Atkins Induction Continues

A Traditional Low Carb BOB ( Breakfast On a Bun)
with Scrambled Egg, Cheese, Canadian Bacon
“You want “yor eggs frad or scrambled?”
(Translation from Texan: “Would you care for your eggs fried, or scrambled?”)

I can just see the woman with the beehive hairdo, smackin’ her gum and waiting impatiently for my order. I was maybe eight at the time and I can still remember the feeling of panic that ensued at the thought of having to make a decision.

So many awesome Holiday Inn breakfast selections, so little time. My family knew enough to let me order last so as to avoid a repeat of the old  “I Love Lucy” episode where Lucy, Ricky, Fred and Ethel order at a restaurant and Lucy changes her order a half dozen times.

I’ve been a breakfast lover since God was a child. Daddy passed that on to me. Sometimes when Dad was out building Kmart stores throughout the U.S., Mom, Nanny (one of our sissies, Nan), and I

Inside Susie's Head - Conversations With Me

Day 5 - 2Week Atkins Induction

Inside Susie's Head
Ring. Ring.

“Hellooooo. Sussssssiiiiieeee…”

“Helloooo. Conscienceeeee…”

“Your going to hell,” the voice said.

“I already have the easy chair with the rusty nail cushions picked out for you beside the roaring fire.”

I replied sarcastically. “Gee, thanks. You’re too kind. Do you have any hints why I’m taking the elevator to the basement floor?”

“I know who you are and I saw what you did last summer,” the voice on the other end of

Linda Sue and Fluffy Chix Do The Cheeburger Cheeburger Twist!

Cheeburger Cheeburger strikes a chord - Oh, I Gotta New Song & It Goes Like This...

Sometimes decisions are difficult. It’s hard to choose who gets top billing this morning, Cheeburger Cheeburger, who became one of Fluffy Chix sponsors of the May 1 Giveaway, or Linda Sue, friend, and long-time recipe queen of LindaSue’s Low Carb Menus & Recipes fame!

Let’s start with my pal, LindaSue! If you haven’t experienced her recipe site yet, where ya been? You just fall off a log out in the hallow or somethin’? Linda Sue’s Low Carb Menus & Recipes is where Linda creates and collects recipes of the low carb/controlled carb persuasion. There are SOOOO many Induction Friendly (IF) and Diabetic Friendly (DF) recipes in her collection, you could eat for days and never make the same delicious recipe twice. Low carbers rejoice! Let the Macarena begin!

Ok, I'm gushing. Am I gushing? *sob* I am.

Shrimp and Cheese Grits Get A Texan's Blood Pumpin'

Day 4 - 2 Week Atkins Induction

Low Carb Shrimp N Cheese Grits makes everybody someone!
Who says ya can’t have cheese grits in a controlled carb world?

I beg to differ!

Them’s fightin’ words for “shore”. I had a big ol’ bowl of shrimp and cheese grits last night and slurped and moaned over every bite.

They were silky. They were unctuous. They stuck to my ribs like white on rice. Oh boy! Opey, tell Miss Bea they were shore nuff tasty!

The trick to eating cheese grits is the grit. As Vinny in My Cousin Vinny once asked, “What is a grit?” Well for most of the world,

Day 3 _ 2 Week Atkin's Induction

Last Night's Dinner - Brontosaurus Rex! I borrowed it
from Fred Flintstone and Dino.
TIP - Hungry for Ribeye but can't afford the $$$? Try buying
beef back bones (Last week's price $2.04/lb at HEB). It's like
eating a Ribeye Popsickle but brown. Mmmmmm Brown!
I heart you Brown. I must break up with you but can't cold turkey.
I have a bit of a diet dilemma going this morning. I'm not hungry.

You heard me.

I'm. Not. Hooooongry!

Like most of my adult life has been spent in pursuit of something to shut the mean hungries the hell up. But now, on day three, I don't want it. I can't conceive of a time when I would ever need food again. Can't think of eating.

You can't make me.

The end.

We all lived happily ever after.

Now mark it down in your calendar and circle it in red, cuz that doesn't often happen.

(I just lost my entire post. :( Let this be a lesson to all. NEVER. Ever compose in your WYSIWYG edit window. Always type it out in Word and then go to a Text doc and then only then, upload and edit. Dang you internet gremlins! Maybe they objected to the poopy reports?)

Day 2 - 2 Week Atkins Induction Challenge

Day 2 – SusieT Report
Weight 264 lbs (-2lbs), Pre-poopy
FBG - 103
Pain - 4

Mood - 9
Walking - 30 Minutes

Susie’s Comments –

Note to Self - Count Your Blessings!
As expected, I’m down a couple of pounds from yesterday. Water weight for certain. I was peeing like Secretariat yesterday so could almost feel the fluid departing from my swollen and inflamed body.

Even though I ate the ginormous half of a Kitchen Sink (that’s code for the Kitchen Sink that only has 1 beef patty in it, instead of 2) at Beck’s Prime last night, I felt peckish before dropping off to sleep and wondered if I would be able to sleep due to hunger.

And that started me off feeling I’m so very blessed to have a roof over my head and warm, abundant food in my tummy. Somewhere in America there are children who aren’t as lucky. That made me very sad. So I said lots of prayers and fell asleep counting my blessings.

Counting blessings is an excellent past-time! PMA is critical to success in all of life. Too often I get sucked in to my panic of the moment or start focusing on the aftermath of the cancer – all-consuming fatigue and widespread pain and neuralgia due to the chemo, surgery and radiation – and I feel resentful of it all. I play the “why-me” game. I whine. I waste time in negative thoughts.

Day1 - April 16 - 2 Week Atkins Induction

Are you ready? Surprise!

For the next two weeks, this Fluffy Chix will be following Atkin’s Induction – stringently. No on-the-fly aberrations, no in flagrante cheatorums, no creative ad libs, no shades of grey or whiter shades of pale – just good old, by-the-book Atkins Induction as the good doctor invented it!

Here are the rules -

1. Follow the Atkin’s Plan as per The New Atkins for a New You by Jeff Volek, Stephen D. Phinney and Dr. Eric C. Westman, based on the ground breaking work by Dr. Robert C. Atkins.

The Un-Barbquezation of Texas Barbequed Pulled Pork

By Robert Earl Keen

Texas Un-Barbequed Pulled Pork makes ya walk like a Texan!
When I was a little *girl*
Only one or two.
The first thing I did enjoy
Was a plate of barbeque.

…Ribs and sausage and a cold Big Red
Barbeque makes old ones feel young
Barbeque makes everybody someone
If you're feelin' puny and you don't know what to do
Treat yourself to some meat eat some barbeque

Tuscan Kale Salad - It's Not Just For Breakfast Anymore

Now…Do I have your FULL attention?

Tuscan Kale Salad with Feta and Pine Nuts and a bit of
crumbled Low Carb Spinach Crackers with Pascal Manale Shrimp
Look, I could sit here and probably create a cute story of how my mama hand-picked the kale from our back yard on Reed Road, when we were growing up. But the truth is to my knowledge, the only thing Mama and Daddy thought kale was fit for was as a decorative embellishment on a tray of fattening and wholly comforting appetizers, or maybe as a "platter carpet" for a plate of oozing and unctuous barbequed duck!

I was 48 years old before I figured out that I could eat the stuff planted in the border of my front flower bed. I was 49 years old before I decided kale was for kids and not for tricky rabbits!

So let me say that again slowly…in English. Kale is an acquired taste. Yep, I'm tellin' you the honest truth. I am.

Low Carb Zucchini & Yellow Squash Linguini With Garlic and Tomatoes - It's Gluten Free Too!

Zucchini & Yellow Squash Linguini served with
LC, GNS-Free Salmon Croquettes make a perfectly light meal.
Get Behind Me Satan (er, oommph, I mean Pasta)!

In the old, pre-low carb days – you could call it my PLC Days, I was a pasta ho.

People on the street inelegantly called out to me, “Hey, Pasta Ho. How ya doin? I see you’re wearin’ last week’s pasta on your booty today!”

It was true. I could “look” at pasta and simply bypass my mouth, tape it to my thighs and call it a day. Pasta was my kryptonite. And I would have happily eaten it every day and frequently did, alas my 314lbs of fluffiness. There was something about twirling and dancing with it. It was as much about the habit as the taste although my pasta was TDF! TDF! TDF!!!!

Oven Fried, Low Carb, Gluten, Nut, Soy-Free (GNS-Free) Salmon Croquettes

All The Flavor – Hold The Guilt!

Healthy, Oven Baked, Low Carb, Gluten, Soy, Nut-Free
(GNS-Free) Salmon Croquette Patties taste awesome!
Growing up in a three-bedroom house with five kids, a mom, a dad and grandmother often meant eating on the cheap. But even though Mama could out-frugal the entire neighborhood, food in our house never tasted less than marvelous.

Two cans of pink salmon cost less than a dollar back then and could feed a family of eight. Do you wonder why Salmon Croquettes frequently appeared on the menu with only slight resistance from Dad and the boys?

See, Mom had it figured out. Salmon Croquettes provided a great calcium delivery system for growing bones. They cost pennies to make, could be extended

Low Carb Sugar Free Chocolate Dipped Peanut Butter Eggs In a Post-Apocalyptic World

What a difference a year makes…

One year ago on Good Friday at 2:00PM, the telephone rings.

The face of cancer. Dead eyes. Profoundly grey in weeks.
Mid-stage of hair loss. Sick to death. No eyebrows. Few lashes.
And a moon face. Sweet. Cancer disfigures literally
and emotionally.
I’m pooped and don’t know why. I’ve been pooped for months with no clear reason other than being 48, post-menopausal, fat, eating poorly again (yep, another episode of The Days of A Backslider’s Life), and not exercising.

I pick up the phone, “Hello? This is Susie.”

“Hi Ms. Gibbs. This is Natalie from Dr. K’s office.”

“Hi Natalie and Easter blessings to you,” I said.

“Thank you,” she said. “Ms. Gibbs. Um. Well, Ms. Gibbs, we received the results from your mammogram today. I wanted to let you know I’m writing an order for you to have a biopsy on

Low Carb Sugar Free Chocolate Dipped Pudding Eggs Make Easter Fun!

“No, I like them crunchy. I could eat a hundred melted Peeps!”

Low Carb Sugar-Free Chocolate Dipped Pudding Eggs
taste like chocolate dipped melted Peeps!
That’s what Joey from Friends woulda said had he eaten these Low Carb Chocolate Dipped Pudding Eggs.

It IS what Denny said when I proclaimed in discouragement that I felt like I should have taken a bit more time to get the erythritol and xylitol blended into a finer powder.

Powdered Erythritol and Xylitol is smoother and blends into confectionary better than granular because Erythritol, especially, LOVES to be a crystal and resists changing composition. So the Low Carb Chocolate Dipped Pudding Eggs have a little "attitude" and crunch bit with their meltingly soft center.

Low Carb Healthy Orange Cake - Is It a Cake or a Muffin?

Orange You Glad I Didn’t Say Banana? And Only 3.9 Net Carbs Per Cake With Glaze - Hurray!

Orange ya glad I made this cake? Low Carb Healthy
Orange Cake with Orange Glaze and Blackberry Garnish.
Only 3.9Net Carbs per cake not including blackberries.
Don’t you love it when kids start “getting” jokes and try to tell their own? Our great niece EJ is telling knock knock jokes that never quite end the way you expect them.

EJ: Knock Knock
Denny: Who's there?
EJ: Banana
Denny: Banana who?

EJ: Knock Knock
Denny: Who's There?
EJ: Banana
Denny: Banana who?

EJ: Knock Knock
Denny: Who's there?
EJ: People!

*snort* It may be locational, but oh my gosh, she starts giggling and it's just the cutest thing!

The Banana joke got me thinking about the orange-you-glad punchline…which led to me

Healthy Oven Fried Fish Rocks Low Carb - Just In Time For Good Friday

The Fluffy Chix Oven Fried Fish recipe morphs two ideas into one easy dish! We were children of the 60s. And of Luby’s Cafeteria. In Houston during the 60s, cafeterias ruled. We had Piccadilly, Wyatt’s, Cleburn’s and Luby’s among others. But nothing could beat the LuAnn Platter at Luby’s.

I could talk for hours about how the flaky fish seemingly dissolved on the tongue or how I greedily rationed each heavenly, crispy crumb of breading. I would eat the mac 'n cheese delicately, one elbow at a time. Ahhhh the innocence of youth!

I didn't know! Sure I was a roly poly kid, but Mom always told me I was big-boned. *wink wink* No really, she blamed it on the steroids I took most of the first 11 years of my life.
