*snort* It may be locational, but oh my gosh, she starts giggling and it's just the cutest thing!
The Banana joke got me thinking about the orange-you-glad punchline…which led to me
craving orange cake, which led to me craving orange muffins. Then I said a prayer for Cinnabon and when that didn’t happen I took matters into my own hands.

All of the sudden I said, “Oh what the hey!
Orange you glad I’m not cravin’ liver? (Cuz Denny and the Boys gag over liver…) So I decided to try out the new Fluffy Chix Low Carb GF NF Bread Mix to see how it does making cake-like structures. I must report the verdict is very good. Not sure it’s 100% yet, but dang, it’s close enough for government work!
This is a bit of a confused entity, this little orange delicacy. The crumb can’t quite decide if it’s a muffin or a cake. It swings either way and can be dressed up in many different flavors. Lemon springs to mind as does lime. I’m craving citrus these days – must be spring. Can you tell?
I won’t bore you with a long story today, too much recipe development and testing to do for low carb Easter treats. I hope to be back here tomorrow reporting on a couple of fun sugar free, diabetic friendly, low carb, gluten free, healthi-er treats (emphasis on the ER…) to try for Easter. In the meantime, I hope you will whip up a batch of these little orange muffins, er cakes! They would be perfect for Easter Brunch and only take minutes to make!
You can find the nutritional information and complete instructions for the Fluffy Chix Low Carb GF NF Bread Mix on this original thread, but I have included the recipe for the Mix below. You will use 3 tablespoons of the mix in the Low Carb Healthy Orange Cake recipe.
Low Carb Orange Glaze

Yield – 6 Rounded Tablespoons (Recipe can be doubled)
Prep Time – 5 Minutes
Cooking Time – None
Difficulty – Easy
Ingredients
3 Tbsp Truvia (Erythritol/Xylitol Blend of your choice), measure before powdering
1 pinch Stevia Glycerite
2 oz Cream Cheese
1/4c Heavy Cream
2 Tbsp Filtered Water
1 tsp Orange Zest
1 Tbsp Orange Juice, fresh
¼ tsp Oranze Extract
Directions
Grind Truvia in coffee grinder to form a powdered version. This helps the blend dissolve in the glaze.
Combine all ingredients and stir with spoon or spatula to incorporate.
Set glaze aside to have ready when cakes are through baking. You will ice them while still warm from the oven.

Yield – 2 Individual Cakes (Recipe can be doubled or tripled)
Serving Size – 1 Cake
Prep Time – 10 Minutes
Cook Time – 30 Seconds to 10 Minutes
Ingredients
½ Tbsp Truvia or Erythritol/Xylitol Combination
½ tsp Powdered Egg White
½ tsp Aluminum Free GF Baking Powder
1/8 tsp Glucomannan Powder
1 pinch Stevia Glycerite
1 Egg, whole
2 Tbsp Greek Yogurt
1 tsp Olive Oil
1 tsp Orange Zest
¼ tsp Orange Extract
1 tsp Sugar Free Marmalade (Polaner’s SF suggested)
½ tsp Braggs Unfiltered Apple Cider Vinegar
Garnish – 3 Blackberries per Cake (Optional)
Directions
Stir dry ingredients together.
Zest one orange and use 1 teaspoon of orange zest in the cake. Reserve remaining zest for glaze.

Combine wet ingredients except vinegar and marmalade. Stir into dry ingredients.
Prepare 4oz ramekins or small coffee cups or mugs by either lining with parchment paper on the bottom and sides, or alternately, you may oil the ramekin and sprinkle with another tablespoon of bake mix per ramekin.
Just prior to cooking, add vinegar to batter and stir well.
Divide batter between 2 ramekins and top with a teaspoon of sugar free orange marmalade for each ramekin.

Glaze warm cakes with 1 heaping tablespoon of glaze per cake. The glaze will run off the cake. Simply scoop it up from the plate and ladle it over the cake again until all the glaze stays on the cake. You build layers of glaze this way.
Refrigerate leftover glaze in air tight container. Will keep 1-2 weeks with proper refrigeration.

Allow cake glaze to set and serve. You can make these orange cakes ahead and refrigerate until serving. Can be made up to one day ahead and stored in an air tight container in the ice box.
(Blackberries make a gorgeous optional garnish if serving this for dessert! A small scoop of low carb, sugar free vanilla ice cream turns this orange cake into a dreamsicle of a dessert! Yummy!)

Microwave Baking Directions – Nuke for 25 seconds on high power. Check for doneness. The cake should be fluffy and done with a set center that still slightly glistens with moistness. Mine took 35 seconds on high. If it isn’t done at 25 seconds, reset oven and check in 5 second intervals. These cook quickly!
Conventional or Toaster Oven Directions – Preheat oven to 400°. Place ramekins in thoroughly heated oven. The heat is necessary to maximize the spring of the rise. Bake for 10-12 minutes checking for doneness at 10 minutes.

*Note on GF Flour Mix: You may buy a high carb gluten free bake mix off the shelf of your grocery store. Almost any gluten free, high carb mix will work here as long as it doesn't have sugar in it! I use King Arthur Flour Multi-Purpose Bake Mix if I don't want to use my Fluffy Chix GF Baking Mix.
**Note on Oat Fiber: Many gluten sensitive and celiacs are unable to handle possible cross-contamination from oats and so oat fiber may be inappropriate for them. Please substitute rice bran or corn bran for the oat fiber if this applies to you.

Ok, here's what you need to know. There is a difference in the texture of the cakes between microwaving and oven baking them. The oven baked cake doesn't have as large or explosive of a rise. The top comes out better rounded and the crumb is denser, but still delicious. If you are making 1 or 2, then use the microwave. If you are doubling or tripling the recipe, bake them in the oven!
I think you should stop reading this and go make these cakes already! OMG. They taste so succulent and make me smile. I could eat them as part of brunch or breakfast or treat them as dessert. They would be over the top with a scoop of ice cream! Can you believe they only have 3.9 Net Carbs per glazed cake?
