My friend Shannon Harding from The Low Carb Dish, a low carb Facebook Group I belong to reminded me about a one-time-true-love. Blue box macaroni and cheese. Yes, I’m a child of the 60-70s and I adored the blue box as soon as I was allowed to taste it (which wasn’t often—Mama was a scratch-cook). I love the Brady Bunch, Leave It To Beaver, and yes, Kraft Macaroni and Cheese. Is it any wonder I’m fluffy?

What's better than a brand spankin' new post about Thanksgiving leftovers? How's about a "leftover" post from last year talking about a recipe near and dear to my heart!? Wanted to toss this recipe to the top of the pile again because it frankly deserves it!

Here’s a leftover turkey recipe out of the ordinary. Aren’t you sick of leftover turkey and gravy? Me too!

This easy Turkey Hash makes a killer “breakfast-for-dinner” or “brinner” as our sock monkey boys like to call it after a full day of BFS (Black Friday Shopping). We enjoy eating it with a fried or poached egg on top so the yummy richness of the egg yolk adds to the comfort experience of the meal. Sliced tomatoes are all you need to go with this low carb hash. I promise you won’t even miss the taters!

And the cost of the meal is ridiculously cheap at $3.26!

Well kiddy troopers, I solved the dilemma of which comes first the Asian Dino Wing or Kitchen Sink Chile Rellenos by publishing these two post simultaneously! Crafty!

I will try to get back to post more images on how to make these, but I’m pretty pressed for time right now. It’s likely you will not see me much over the next couple of weeks. I’m having the first of 3 to 4 reconstructive surgeries starting next Tuesday. The first surgery will be a big one at somewhere around 7-8 hours long. They will be taking 2 muscles from my shoulders and implanting them into my chest wall so that there is living muscle capable of holding up my implants. I don’t have any muscles left cuz they took it all

You’ve all heard about the Easter Bunny, right?

I lived the life of a Texas Transplant for a few years in my misspent 20-somethings. Living in the wilds of Denver, Colorado, just 6 blocks from Washington Park in an old neighborhood called Old South Gaylord, truly felt like a whole other life.

Old South Gaylord was a picturesque little neighborhood, filled with incredible people, and soooo different from Texas - my beloved state to thee I sing.

What are the odds, but I met another Texas Transplant only 3 doors down? What a fun time in our life! We’d sit out on the front porch every night and would all yell over at all the neighbors sitting on their porches.

And oh my, the crazy Front-Porch-Martini-Parties we’d throw! FUN! This would go on all summer long. I

Imagine my surprise, tooling along on Day 10 of a 2Week Atkins Re-Induction adventure. Happy, care free. Not a thought in my head. Except supper, or dinner by any other name. And I started hankerin’.

That’s right.

I hanker – especially around the 3 o’clock p.m. Witching Hour. Don’t hate.

I started hankerin’ after a photo I saw on Pinterest for this gorgeous zucchini ribbon salad. Now let’s understand this. I don’t eat raw zucchini. In fact, I have only eaten zucchini, raw, on one occasion in my life. I was 10 years old and Mama decided to “try it out.” She decided to throw a test balloon into the family atmosphere and see how it flew.

We loved it! Everyone, including the family dog, “Cat,” loved it! Understand, back in the 70s when Ranch was new, its popularity blazed like a comet! Why, in Texas,

In the old, pre-low carb days – you could call it my PLC Days, I was a pasta ho.

Really.

People on the street inelegantly called out to me, “Hey, Pasta Ho. How ya doin? I see you’re wearin’ last week’s pasta on your booty today!”

*sigh*

It was true. I could “look” at pasta and simply bypass my mouth, tape it to my thighs and call it a day. Pasta was my kryptonite. And I would have happily eaten it every day and frequently did, alas my 314lbs of fluffiness. There was something about twirling and dancing with it. It was as much about the habit as the taste although my pasta was TDF! TDF! TDF!!!!

I hope by now you are coming to realize that I love foundation recipes – or mother recipes – as I like to call them. Foundation or mother recipes come in useful when learning to cook because they represent building blocks and short cuts to more complex recipes.

Grilled veggies are a foundation recipe because once you make them, the grilled goodies can morph and springboard into several different recipes as an ingredient rather than a “destination.” You can flavor them creatively which adapts their flavor to fit many different cuisines.

 Pasta represents a huge ooga-booga bear. I’m weak-willed and more than a little slutty when it comes to pasta. I want it badly. I beg to go steady with it. I text and phone it incessantly. It is my heroin and I have few defenses against its seductive allure. In fact, put pasta up against any kind of sweet you can imagine and pasta will win before the match begins.

I love it that match.

I covet my neighbor’s pasta is what I do. I’m a coveter.

And the only two things that get me past “my preciouses” are my totally functional food buddies: zoodles and the handy, dandy Konjac noodles whom you’ve already met.
