Chicken Avocado and Blue Cheese Sandwich with Garlic Aoli is Perfectly Low Carb

You might be forgiven for the immediate blasphemous cursing erupting from your mouth at this very moment. I hear you. I do.

Satisfying and low carb too. This chicken sandwich bears no
resemblance to our old high carbage days.
You’re saying, “Who the hayull (Texan for h-e-double ut oh) does she think she is? *snort* She’s now demonstrating how to be an even bigger waste-of-blog-space than she has in months past.

Now Susie’s turning out such derivative drivel as telling me how to make a sandwich with store bought rotisserie chicken. What a crock of horse puckies!

Next thing you know, she’ll be showin’ me how to boil water! Razzafrazzin’ rumplemazzin’ curfufflesplazzle #%@@@@#$#$#$@$^$^#@$$!!!!!!!”

So on that note, please be sure to join me next week as we explore the mysteries of boiling water. *evil grin*

Low Carb Tex-Mex Sloppy Joes To The Rescue!

Hiho Silver! Away!

Low Carb Tex-Mex Sloppy Joe with a side of Bing cherries!
I know, YOU know, I know… that everyone and their brother, most especially God and his Son are aware that I am slightly obsessed and geeked out about food, nutrition, how nutrition relates to health and wellness and cancer prevention.

Everyone under the sun also knows that I’m, oh let’s just be kind and say “fixated” on having my proverbial cake and eatin’ it too! I want healthy food that tastes awesome! I want comfort food to conform to my specific low carb diet. I want agents of rescue. I want the Lone Ranger of Low Carb to ride up on Trigger and sweep me away to a land of Texas splendor…

In case you just arrived at the scene of the crash, what the captain is really sayin’ here (or what I really mean) is that I want to continue to get a pleasure fix from food, have that endorphin rush from what I put in my “mouf”, while simultaneously eating food as if it

Revolutionary Low Carb Hot Dog Buns, Sandwich Rolls and Wraps

All Low Carb! All The Time! Hehe! Low Carb Rolls and Wraps That Will Have You Feelin' The Love!

Low Carb, Gluten Free Revolutionary Buns make
weekend fun-time grilling something to look forward to again.
Weekends felt special, growing up in our family. It seemed like every weekend,  three houses of neighbors and their bazillion kiddos got together and had a party.

The dad’s cooked something up on the grill or pit. The mom’s made great sides and desserts and through it all, our WaWa (Daddy’s mom) would solidly pitch in to help cook and also smooth the madness that was constant activity among the Gibbs family, the neighbors and kids running helter skelter. She was the running board on our sailing ship. Without WaWa, we were difficult to direct.

Saturday Mornings With BOB (Breakfast On a Bun) and Daddy

Day 6 - 2Week Atkins Induction Continues

A Traditional Low Carb BOB ( Breakfast On a Bun)
with Scrambled Egg, Cheese, Canadian Bacon
“You want “yor eggs frad or scrambled?”
(Translation from Texan: “Would you care for your eggs fried, or scrambled?”)

I can just see the woman with the beehive hairdo, smackin’ her gum and waiting impatiently for my order. I was maybe eight at the time and I can still remember the feeling of panic that ensued at the thought of having to make a decision.

So many awesome Holiday Inn breakfast selections, so little time. My family knew enough to let me order last so as to avoid a repeat of the old  “I Love Lucy” episode where Lucy, Ricky, Fred and Ethel order at a restaurant and Lucy changes her order a half dozen times.

I’ve been a breakfast lover since God was a child. Daddy passed that on to me. Sometimes when Dad was out building Kmart stores throughout the U.S., Mom, Nanny (one of our sissies, Nan), and I

Un-Corned Beef Reuben

(The Best Un-Corned, Un-New York, Un-Jewish, Un-Sandwich You’ve Ever Tasted)

Find Printable Recipe Here

What on earth do you make with Un-Corned Beef, you ask? Making a Reuben sandwich tops my list. The best Reuben comes from corned beef made in New York and is served on dense, rustic, pumpernickel rye bread. It’s toasted on a griddle with gooey Swiss cheese and gobs of butter and is served topped with crispy, salty sauerkraut and mildly sweet Russian dressing. Oh my gosh, where’s my drool cup when I really need it?
