Seriously Stacked, It's Where It's At! The El Chupacabre of Leftovers! Olé!


Green Chili Chicken Enchilada Stack -
the king of Tex Mex.
Dang! Green Chili Chicken Enchilada Stack - now that’s a mouthful, and you haven’t even picked up a fork yet. Green Chili Chicken Enchiladas epitomizes Tex Mex comfort food at its best. I hear ya. You’re sayin’, but where is the red sauce? Where is the enchilada sauce?!!!
Sometimes it’s good to go green! I could even go so far as to call this a king among Tex Mex

and leftovers alike. Cuz when you get right down to it, that’s what we’re talkin’ bout here. RSL (Really Serious Leftovers)! That’s right. It takes about 10 minutes to build this Green Chili Chicken Enchilada Stack and that’s only because you have to haul everything out of the ice box and grate cheese.

These work perfectly for Cinco de Mayo and best of all? They are El Muy Chupacabre approved.

And the best, BEST part of all? When was the last time you had chicken enchiladas that only had 11g of net carbs for a HUGE serving that includes sour cream and salsa? And it only has 514 cals?

When?

When??!

The answer is never!!! You've never seen em anywhere!
The recipe for Green Chili Chicken Enchilada stack consists of 4 ingredients. How simple, right? Even our dog, Boo, can make them – just don’t let him near the tequila for the low carb margaritas or it’s Good Night, Irene!
Pull out the leftover Low Carb Corn Tortillas (par-baked version).












Now hook them up with the leftover Green Chili Pulled Chicken (Yeah, I don't care if you use the stew version with the cauliflower or use the straight up Green Chili Pulled Chicken. It's all good!)












Stack them together and uno, dos - uno, dos, tres! Olé!
Now place the casseroles on a foil lined baking sheet for easy cleanup and Happy Cinco de Mayo! Bake at 350° for 30-45 minutes. Wooohooo!












And ready! These look good enought to eat, doncha think?!

Green Chili Chicken Enchilada Stack

6.26.14 UPDATE: Use the Psylli Wraps - Induction or Owl versions to make these stacked enchiladas. Nuke wraps for 30-45 seconds in the microwave on high to make them crispy. Olé! *The nutritional info will change because of the new wraps.

Green Chili Chicken Enchilada Stack with
sour cream and green salsa. Olé!
Serves – 2
Difficulty – So Easy a 2Year Old Could Make Them
Prep Time – 10-15 Minutes
Cook Time – 45 Minutes

Ingredients:

Optional:
  • Sour Cream
  • Green Salsa
  • Avocado

In 2 individual casseroles, place part of leftover Green Chili Pulled Chicken on the bottom of the casserole. Top with a little cheddar and place tortilla over it. Repeat layer order for the second layer. Add the second LC Corn Tortilla. Top with a little Green Chili Pulled Chicken. Finish with cheese and onions as the last layer. (Onions are optional.)

Bake at 350° for 30-45 Minutes or until hot and bubbly all the way through. Remove from oven and top with your choice of sour cream, green salsa and avocado. Serve piping hot with a cold side salad made with homemade apple cider vinaigrette and avocado, cucumber, tomato, onion and mixed lettuce!

This is four forks for sure. I don’t care what protein you make this green chili with – it rocks! It’s close to an 11 (cuz our amps go up to 11 – for all you Spinal Tap fans). Seriously. It hits on all levels. It’s Tex Mex. It’s cheesy, gooey, hot from the oven, hot from the peppers (but not heat bomb hot), and has a satisfying bulk to it. For little effort, you walk away full to the bones but not gross full fealing like you sometimes feel after eating at a Mexican Restaurant - remember your BLC (Before Low Carb) Days? Ugggh. Blech!

Every time I make something like this, I shake my head in amazement. Can this really be diet food?

I mean, it’s a HUGE serving and including the sour cream and salsa, the Green Chili Chicken Enchilada Stack only has 514 calories? And it gives you a wallop of Vitamins A, C and Calcium??? I just find that amazing!?

Please try these. You won’t regret it.

And you will never look at leftovers the same way again. Leftovers should never LOOK like leftovers! Leftovers in our house are as stealthily disguised as...well, as stealthily disgued as the great wrestler, El Muy Chupacabre! Olé!

    you are also on quite a roll. Your carrot cake recipe may just be the straw that broke the camel's back!

    I've been resisting having sweets here in the house for us lately unless I have a good "excuse" like having a feast day or company lol, but I soooo want to try your new Gluten Free Bake Mix out for something really dessert oriented! So now I'm torn. I'm torn between your amazing Carrot Cake Loaf with yummy Cream Cheese Icing and torn between lemon bars. I know it's gonna happen this week.
