Low Carb Chicken Pot Pie Deconstructed

Day 13 – 2Week Atkins Induction

Low Carb Chicken Pot Pie Deconstructed with
Mixed Green Salad and Stuffed Crust Revolution Rolls.
I’ve fallen way behind and the faster I run, the behind-er I get! “Helpmay Jasus!”
This is going to have to be a flyby visit and post for Day 13 so I can catch up with Day 14 and the post about results!

Had a most excellent Saturday, we walked. We talked. We watched NASCAR racing. And I cooked and played in the kitchen. No stresses or worries and no schedules. What a blessing to have a day like Saturday! I came up with a very credible low carb chicken pot pie. *drool*

(Disclaimer – Denny thought it was just, “Meh, okay…” But what does he know? He’s a philistine who hates seafood and also hates tarragon if it isn’t in a béarnaise.)

Low Carb Chicken Pot Pie Deconstructed uses a veggie
puree and cream cheese to thicken rich chicken broth.
This chicken pot pie has tarragon. In fact, it depends on tarragon. If you hate it, then omit it. You will regret it. But omit it, you can.

Mushrooms, kale, onion, cubed cauliflower, onion, and diced green beans help support thick chunks of leftover rotisserie chicken. Yes, you heard me. I took a short cut and used some of that leftover rotisserie chicken from earlier in the week! *blush* *apologies* (But dang! It worked like a charm!)

Maybe the most incredible feature of the chicken pot pie is the Fluffy Chix spin on a crouton. Our life-philosophy is why have bread (even low carb) if it doesn't act as a butter, cheese, or paté delivery system?

You could say this is a Low Carb Chicken Pot Pie Deconstructed. Ok, go ahead and say it, whydoncha.

You can serve the stuffed rolls sitting on top of the Low Carb Chicken Pot Pie broth, like a crouton, or eat it on the side. I actually broke mine up and ate it in the broth. You can also use the Low Carb Chicken Pot Pie as a filling for a low carb crepe, but that's another recipe! (Don't worry, I have bags of leftovers in the freezer for just that occasion.)

and creamy and gooey on the inside.
I came up with a great use for those leftover Revolution Rolls. Yes, Induction Friendly once again! I made parmesan-crusted, stuffed crust, Revolution Rolls that will knock your socks off. They're so awesome that all the carbo-monkeys in your house will eat-them-all-gone before you have a chance to stake a claim. You will get rave reviews from anyone you deign to serve this scrumptious pillow of crispy cheesishness to. (Sorry for ending with a preposition.)

Seriously. I can’t wait to give you the recipe this week.











The Big Salad - Salmon Niçoise Salad in all its tarragon glory!
For lunch I utilized the leftover salmon from Friday night. Have I mentioned lately how much I adore leftovers?

Niçoise Salad may just be one of my favorite salads on the planet. The combinations of tarragon dressing with green beans, mixed greens, crisp cucumbers and onions combined with creamy egg, blue cheese and salmon makes my heart beat faster. (Yeah, Denny was again, “Meh, it’s good.” – Tarragon…remember?)





Salmon Niçoise Salad makes a beautiful composed salad.
I will give you the recipe for this too, but honestly, just look at the picture and put those elements together with the Lemony Garlic Vinaigrette recipe from last week, only add about a tablespoon of freshly chopped tarragon.

(I love fresh herbs and they are so easy to grow. I have pots of them that I overwinter. They are all about 4 years old, now.)

The Salmon Nicoise Salad is so big, we reinvented the "Big Salad." Shut up, Seinfeld.

    1. Arlene!!! {{hugs}} Thank you so much for this feedback!!! You know, it's very easy to get into ruts. I know I get in them. :) And thinking outside the box really encourages us to stay on our toes. I had so much fun being an Inductioneer for the last 2 weeks. Don't forget I will be posting many of the recipes in the coming weeks.

      Today is the day for the drawing too!!! Yay! I'm so excited!!! I'm printing out names this morning and have my trusty "chemo cap" ready and waiting. :)
