Atkins Induction Day 9 - It Needed Eatin'

In Texas we have a saying, “He needed killin’.” It’s known as the “Texas Defense.” And it’s a doozy!

Over the years, I’ve modified the Texas Defense to my own needs. It’s become the primary mantra of my inner Fluffy Chix (you know, the diva one or aka my inner-DFSW)—and you may not know, I actually have 3 mantras, cuz if one is good, then three have to be much better. As you know, a DFSW is a delicate-flower-of-southern-womanhood. “It needed eatin’.” Is the Fluffy Chix Cook’s Texas Defense, and refers to any item in the pantry, fridge or freezer just achin’ to be murdered and “et,” as we say in Texas.

“It Needed Eatin’” is the theme of Day 9 - Atkins Induction. I gathered up all the food in the fridge that needed a serious cookin’ and the results of the day were absolutely delicious if I do say so myself. I had a few leftover wienies nearing their sell-by date that became a quick catch-as-catch-can lunch of NYC Dirty Dog Bowl with kraut and melty mozzarella, slathered in yellow mustard. Whhhhooooooo doggy!

I also had a more serious problem than old wienies in the ice box! I had 2 pounds of chili grind I’d let defrost in said fridge the day before, mistakenly believing I had enough give-a-good-dern to cook it the day I defrosted it that became Beef Enchilada Dip (aka the Taco Bell Enchirito Copycat). The chili meat was a very serious case of use-it-or-lose-it.

last lonesome half of a Jalapeno Cheese "Corn" Muffin
makes for a seriously delicious Atkins Induction breakfast.
Almost squishy grape tomatoes on the counter and an innocent little avocado were just hangin’ out threatening to strike and create mayhem with the wienies and chili meat. So they had to go too and became part of my easy breakfast of 2 softly fried eggs in extra virgin olive oil and the very last half of a Jalapeno “Corn” Muffin. "Take no prisoners," is my second kitchen motto.

And perhaps the most important motto of all, rounds out the trifecta: “Don’t try this at home, Kitchen Roulette, or “It Needed Eatin’, can have life-altering consequences that could send you to a hospital or to the bathroom for hours." We are professionals.

Day 9 Daily Totals: 1526 Calories; 110g Fat (65.4% calories from fat); 96g Protein; 35g Carbohydrate; 12g Dietary Fiber; 720mg Cholesterol; 23g Net Carbohydrate)

Breakfast (505 Calories; 44g Fat (77.5% calories from fat); 18g Protein; 11g Carbohydrate; 4g Dietary Fiber; 471mg Cholesterol; 7g Net Carbohydrate)
3 cups decaffeinated coffee, black, unsweetened
2 large eggs, fried in olive oil
1 1/2 tablespoons olive oil
1 ounce avocado
3 ounces tomato
1/2 serving Jalapeno Coconut "Corn" Bread

Lunch (371 Calories; 22g Fat (55.3% calories from fat); 29g Protein; 11g Carbohydrate; 5g Dietary Fiber; 79mg Cholesterol; 6g Net Carbohydrate)
2 Nolan Ryan’s Smoked All Beef Wieners
1/2 cup sauerkraut
2 ounces cabbage
1 dill pickle spear
1 tablespoon yellow mustard
1 ounce mozzarella cheese, part skim milk

Dinner (676 Calories; 45g Fat (61.0% calories from fat); 50g Protein; 15g Carbohydrate; 4g Dietary Fiber; 170mg Cholesterol;  9g Net Carbohydrate)
1 serving Beef Enchilada Dip
1 portion pork skins

NOTES:
After 14+ years of this, I simply refuse to get my dainty DFSW panties in a wad about going over my 20g of Net Carb allowance by a measly carb or two. It's much better to promise yourself you will get upset over something legitimate later, and save the adrenaline and cortisol for that! Remember, it's low carb--not NO carb! And trust me...23g of Net Carbs is still LOW carb!
