I'm going to spend the next couple of posts bringing you two very important books that in my opinion, make great Christmas presents--for someone else, or just as importantly, for your personal Christmas wish list!
The first book, NOURISHED, A Cookbook for Health, Weight Loss and Metabolic Balance by Judy Barnes Baker has been an eye-opener. Many of you know I've been low carb for most of 14 years now (more on than off). I love this lifestyle and feel better when I faithfully follow my personalized plan than when I'm eating a SAD (Standard American Diet). I honestly thought I knew all there was to know about low carb. I thought I knew what each macronutrient brought to the table, the good fats, bad fats, the science behind low carb. I thought I could whip out a recipe for whatever we craved, whenever we wanted. I thought I didn't need to know anything else. But boy was I wrong!
When my friend, Judy Barnes Baker, sent me a copy of her book, NOURISHED, A Cookbook for Health, Weight Loss and Metabolic Balance, I was simply astounded by the easily readable facts of low carb! Judy takes a very technical subject (the science behind low carbohydrate nutrition) and breaks it down into easily absorbed information we need if we want to properly follow LC. She thoroughly explains the differences between each food group and food product and in fact, the book has quickly become our LC Bible.
As newbies starting out on our low carb lifestyle, we had so many questions that the old low carb diet books didn't answer with the degree of certainty we needed as beginners. NOURISHED answers those questions, clearly and concisely. It's like having a "low carb Mom" to go to with all your questions about how or what to eat for the best results. And the recipes? Oh my! The recipes and photos are awesome! Judy makes traditional cooking feel like comfort for the soul. And if you're inclined to want to "re-create" high carb comfort food, she carefully gives you the tools to do so using low carb options for flour and sugar substitutes.
It's hard to believe the ADA (American Diabetes Association), rejected the very recipe book they commissioned from Judy on the basis of it being too "low carb." But their rejection is our gain! And in my opinion, if you are diabetic or pre-diabetic and pass up NOURISHED, you are missing a chance to regulate blood sugars without the use of medicines that carry many potential adverse effects. You are passing up a chance at living a normal, disease-free life.

"Logic dictates that since diabetes is a disease of defective carbohydrate metabolism, minimizing carbs should be the first line of defense, the prime directive. If blood glucose is kept within the normal range, a person with diabetes can be as healthy and symptom-free as a person who does not have diabetes. That is what normal means. As long as glucose is well-controlled, diabetes will not progress to cause blindness, kidney failure, amputation, heart failure, stroke, or any of its other complications. Eating a diet that minimizes the need for insulin can turn diabetes from a deadly disease into an inconvenience."
