I've sorted through and decided to re-post about this gorgeous hunk-o-meat, because Christmas "Roast Beast" is always popular and people always need a full-proof way to cook standing rib roasts (sometimes generically referred to as "prime rib," even though most store-bought rib roasts are far from "prime" status).
This is a pretty exhaustive and complete step-by-step pictorial and description about how you can amaze and astound your dinner guests with very little effort or angst! In fact, if you have 20 minutes, you can whip one up and shove it in the oven and 15-20 minutes per pound later, feast on an elegant, succulent and mind-blowingly delicious beefopalooza.
During the holidays many stores offer standing rib roasts at loss-leader prices. This means they're willing to give you the cow for almost-free with only a $10-$20 commitment from you. Sweet, right? We've been enjoying standing rib on sale for $3.98/lb. It's a bargain, when you consider rib eye steaks (cut from the same primal section) cost anywhere from about $7.98/lb - $30+/lb! We stock up during the sales and vacuum freeze the meat.

Psssst...don't fear the seasoning! Really slather on the cracked black pepper. Oh and don't forget, for most recipes here on FCC, we use coarse sea salt or kosher salt which is less salty than iodized table salt! It's harder to over-salt with kosher or c.s.s. (but it can still happen).
