Had a most excellent Saturday, we walked. We talked. We watched NASCAR racing. And I cooked and played in the kitchen. No stresses or worries and no schedules. What a blessing to have a day like Saturday! I came up with a very credible low carb chicken pot pie. *drool*

Thanks for being patient. I took yesterday off, blog-free. I needed to rest and refuel my engines! But never fear, I still remained a sturdy and stauch Inductioneer. I’m on the downhill side of the most restrictive period of Atkins Induction (and also Phase I of South Beach).

This post is actually about Friday’s nutrition and menus. (Note: This day is mostly about creative re-purposing of leftovers. It's why I always cook for 4, when there's only 2. That way, I know with reasonable assurance, I can whip a meal together in a much shorter amount of time than if I had to make each thing from scratch, on the fly.)

Even though I was already low carb when I began my 2 Week Induction Challenge, I've still lost over 5 pounds and have lost over one inch from my non-boob chest (hello back fat), waist and hips! 

Score! Yeah, baby! That's what I'm talkin' 'bout! The scale can lie all it wants, but you can't argue with the measuring tape. Talk to the measuring tape!

I’m happy to say I had an awesome Day 10. Delicious food, Induction Legal, left me hunger-free and happy. Oh yeah, I’m happy when my tummy is happy – and full! I also had good news on the scale – 232.4lbs. Yes!

Thanks to my cool hotdog buns made from my basic Revolution Roll recipe, I had amazing! I do mean. AMAZING chili dogs I actually held in my hand – no fork required. What a FUN-ctional food!

Imagine my surprise, tooling along on Day 10 of a 2Week Atkins Re-Induction adventure. Happy, care free. Not a thought in my head. Except supper, or dinner by any other name. And I started hankerin’.

That’s right.

I hanker – especially around the 3 o’clock p.m. Witching Hour. Don’t hate.

I started hankerin’ after a photo I saw on Pinterest for this gorgeous zucchini ribbon salad. Now let’s understand this. I don’t eat raw zucchini. In fact, I have only eaten zucchini, raw, on one occasion in my life. I was 10 years old and Mama decided to “try it out.” She decided to throw a test balloon into the family atmosphere and see how it flew.

We loved it! Everyone, including the family dog, “Cat,” loved it! Understand, back in the 70s when Ranch was new, its popularity blazed like a comet! Why, in Texas,

We’re one trick ponies. I know you think we’re chix. But we’re really one trick ponies. Ok, we're one-trick-pony-chix and Denny is the HRIC (Head Rooster In Charge).

When we find something or someplace where our needs are met, we’re happy, secure, and satisfied with life. We get comfortable. And that is pretty much the story of our “eating out” life. Our dining life. There are a handful of places Denny and I really enjoy and if the name of your restaurant isn’t one of those places, too freakin’ bad Dirty Harry, cuz you won’t have a chance to “make my day.” Nor Denny’s either.

I can just see the woman with the beehive hairdo, smackin’ her gum and waiting impatiently for my order. I was maybe eight at the time and I can still remember the feeling of panic that ensued at the thought of having to make a decision.

So many awesome Holiday Inn breakfast selections, so little time. My family knew enough to let me order last so as to avoid a repeat of the old  “I Love Lucy” episode where Lucy, Ricky, Fred and Ethel order at a restaurant and Lucy changes her order a half dozen times.

I’ve been a breakfast lover since God was a child. Daddy passed that on to me. Sometimes when Dad was out building Kmart stores throughout the U.S., Mom, Nanny (one of our sissies, Nan), and I
