For some reason I channeled Dr. Seuss last night – again. I blame it on the Tomato Stack...

I scored a free ride on the Cheeburger Cheeburger (No-Coke-Pepsi) Express last night, compliments of Denny Crane. Truth was I was draggin’ tail and could not get the energy to rustle up some grub for Denny and the “boys”.

Oh the boys woulda been the easy part, just fling ‘em a banana and a couple of peanuts and they’re set! Sock monkeys don’t take much feedin’. But Denny is a bit trickier. Turns out all I had to do was pretend to take a package of chicken out to defrost for dinner. Who knew?! Remember that trick!

I started obsessing about yet ANOTHER image I found Verrrrrry Pinspirational! Pinteresting enough to make and to make it up on my "You Pinspire Me" Board.

And the obsession began. I obsessed about how to change it. How could I own it? How could I make it mine-all-mine!

Conclusion of the 2Week Atkins Induction Challenge

I woke up this morning.

Yeah. I woke up! When you’re knock, knock, knockin’ on 50’s door, that is a fork in this Texas girl’s road that becomes increasingly important with each passing year. More so this year, because of the fight with Stage IIIC Breast Cancer. (Don’t really understand yet why I’m so insistent about putting caps to those words…hmmm. Points to ponder.)

Thanks for waiting so patiently as I get caught up here in the Fluffy Chix Roost. I’m long overdue to deliver the 2 Week Atkins Inductions results. The 14th Day ended Sunday at midnight. I kissed it goodbye, filed it under “done” and am ready to climb that ladder into OWL! Come on ladder. Feets don’t fail me now!

Although staying at 20g of Net Carbs per day was pretty easy, peasy, the part of me that is headstrong and wants what I want, when I want it, really hates being confined with restrictions. Especially now after

May 1 Giveaway Results Are In!

You could smell the excitement in the air. Of course, with 5 sock monkey boys that’s no big surprise. They could hardly contain themselves, waiting for the stroke of 3 o’clock p.m.

Every 2 minutes I’d hear, “Is it time yet?”

Had a most excellent Saturday, we walked. We talked. We watched NASCAR racing. And I cooked and played in the kitchen. No stresses or worries and no schedules. What a blessing to have a day like Saturday! I came up with a very credible low carb chicken pot pie. *drool*

Thanks for being patient. I took yesterday off, blog-free. I needed to rest and refuel my engines! But never fear, I still remained a sturdy and stauch Inductioneer. I’m on the downhill side of the most restrictive period of Atkins Induction (and also Phase I of South Beach).

This post is actually about Friday’s nutrition and menus. It was another Fasting Meatless Friday – always a challenge in a home headed by a meat-and-taters guy, and 5 sock monkey boys who also think meat and potatoes (and bananas) hung the moon. (Note: This day is mostly about creative re-purposing of leftovers. It's why I always cook for 4, when there's only 2. That way, I know with reasonable assurance, I can whip a meal together in a much shorter amount of time than if I had to make each thing from scratch, on the fly.)

I’m happy to say I had an awesome Day 10. Delicious food, Induction Legal, left me hunger-free and happy. Oh yeah, I’m happy when my tummy is happy – and full! I also had good news on the scale – 232.4lbs. Yes!

Thanks to my cool hotdog buns made from my basic Revolution Roll recipe, I had amazing! I do mean. AMAZING chili dogs I actually held in my hand – no fork required. What a FUN-ctional food!

Imagine my surprise, tooling along on Day 10 of a 2Week Atkins Re-Induction adventure. Happy, care free. Not a thought in my head. Except supper, or dinner by any other name. And I started hankerin’.

That’s right.

I hanker – especially around the 3 o’clock p.m. Witching Hour. Don’t hate.

I started hankerin’ after a photo I saw on Pinterest for this gorgeous zucchini ribbon salad. Now let’s understand this. I don’t eat raw zucchini. In fact, I have only eaten zucchini, raw, on one occasion in my life. I was 10 years old and Mama decided to “try it out.” She decided to throw a test balloon into the family atmosphere and see how it flew.
